Hi Jaycmeza! Can you open the System Report for your video card and see if it reports as Metal compatible? To do this click the Apple logo in the upper right, and then 'About this Mac'. Then click on 'System Report'. On the left column, click on 'Graphics/Displays'. Can you post a screenshot of this page? For an example of what it should look like, here is mine with my GTX 960.

In May 2018, on the Nvidia user forum, a thread was started asking the company to update users when they would release web drivers for its cards installed on legacy Mac Pro 'cheesegrater' machines up to mid 2012 5,1 running the macOS Mojave operating system 10.14. Includes NVIDIA Driver Manager preference pane. Includes BETA support for iMac and MacBook Pro systems with NVIDIA graphics; Release Notes Archive: This driver update is for Mac Pro 5,1 (2010), Mac Pro 4,1 (2009) and Mac Pro 3,1 (2008) users. Nvidia GPUs receive driver updates soon after each version update of OS X. You will not find individually named Nvidia drivers for OS X, they are all titled 'Quadro & Geforce Mac OS X Driver Release xxx.xx.xxxxx'.
While I haven't tried to install Mojave yet, I'd imagine it won't work without the latest Nvidia web drivers. It took them around 3-4 months to come out with the High Sierra ones, I'd imagine the same will be true with Mojave.
